Recipes For Canning Hot and Mild Salsa

Most all salsa canning recipes are a mixture of low acid (peppers, onions, garlic) and high acid foods (tomatoes, vinegar, lime juice). It is important to have an overall high acid salsa mixture when using the water bath canning method. Otherwise the salsa could be susceptible to Clostridium botulinum bacteria, which can result in a deadly salsa.

Selecting tomatoes

The ripeness and type of tomato affects the quality of the salsa. Starting with tomato paste made from Roma tomatoes will result in a thicker salsa. If your salsa is

Overly ripe tomatoes do not make for good canning and salsa. Using poor quality tomatoes can result in premature spoilage of the canned salsa. The salsa will not taste as well.

Selecting peppers

Only use high quality peppers or chilies in your salsa. Don't use over ripe or near spoiled peppers. The resulting salsa will be bad and may spoil in the canning jar.

Substituting of peppers is perfectly ok. You can replace hot peppers such as jalapeno with mild peppers like the Anaheim, Ancho, College, Colorado or Hungarian Yellow Wax peppers or any other mild peppers for a mild salsa. The hotter the pepper the hotter the salsa will be.

Do not increase or decrease the amount of peppers in the recipe. This will adversely affect the overall pH of the salsa and could allow the bad clostridium botulinum bacteria to grow in the canning jar.

Salsa Canning Recipe

Ingredients

8 Finely chopped jalapenos, remove the seeds and inner membrane for a mild salsa
1 Finely chopped habanero that has been deseeded and the membrane removed
4 1/2 pounds, by weight, of tomatoes
2 cups coarsely chopped onions
1 cup coarsely chopped bell pepper (green or any other color)
3 cloves minced garlic
1-2 5 ounce cans of tomato paste (depending on how thick you want your salsa to be)
3/4 cup white vinegar
1/2 cup loosely packed chopped cilantro
1 tsp ground cumin
1 tsp pickling salt
1 tsp cayenne pepper (for mild flavor, leave this out)
1/4 cup lime juice

Finely chop the jalapenos. For mild salsa, slice the jalapeno length wise and scoop out the seeds and the inner membrane using a spoon.

Prepare the fresh tomatoes by removing the skin. Remove the skin by dipping the tomato into boiling water and waiting until the skin splits. This usually takes between 30 and 60 seconds. Move the tomato into cold water and remove the skin.

In a large sauce pan combine all of the ingredients, except for the lime juice. Bring to a vigorous boil and then back the heat off until a gentle boil is reached. Cook for 30 minutes until the desired consistency is reached.

While the salsa is cooking sterilize the canning jars, lids, canning funnel and non metallic spatula. Keep the jars hot since they will be hot packed in a water bath at 140 degrees F.

Remove from the heat and add the lime juice.

Ladle the hot salsa into the canning jars leaving 1/2 inch head space per jar. Remove air pockets with the spatula. Using a paper towel dipped in hot water wipe the rim of each jar clean.

Put a lid on each jar and tighten the ring finger tight.

Process the jars for 20 minutes in a hot water bath. I use a hot water bath canner to process the canning jars since it has a wire basket that keeps the jars off of the bottom of the water canner and makes it easy to lift the jars out of the water bath after the processing time is over. Don't let the jars sit in the hot water longer than the recommended processing time as the salsa could spoil.

Place a towel on the counter top and set the jars on it to cool. Don't use a fan to cool the jars, the jars may break. Once cool, test the seal by pressing down on the lid. The lid should suck down and not pop back up. Move the jar of any lid that pops back up into the refrigerator and use up in the next two weeks.

Turkey Fryer Recipes - Recipes For Deep Fried Turkey

Turkey Fryer Recipes are all the rage this time of year. You normally think of fried chicken, not turkey, well you will soon discover how delicious fried turkey can be. Be careful though; follow the directions of your fryer carefully as to not cause an accident.

The following are three recipes you must try:

DEEP FRIED TURKEY
1 turkey, 12-15 lbs, thawed
5-6 gallons peanut oil
1 stick butter
3 cloves minced garlic
1 teaspoon soy sauce
1/4 lb salt pork, chopped to a fine mince
1/2 teaspoon paprika
1 large outdoor turkey fryer
1 turkey marinade injector
1 mesh strainer
salt and pepper

Set up your turkey fryer outside; make sure the fryer is away from flammable objects such as your house. It is wise to remove little children and your pets from the area you will be frying in. You will also need a heavy-duty wire to lower and raise the turkey from the grease, most fryers provide this.

The turkey must be fully thawed before frying, as excess water will cause the oil to bubble up.

Combine salt pork with minced garlic and 1 tsp. of peanut oil and fry in a pan on low heat for 30 minutes. Add to the pan soy sauce, paprika and butter and cook until butter has melted. Stain this mixture to remove bigger bits and then pour into marinade injector. Inject the turkey; remove pop-up timer and place in the refrigerator overnight.

Cooking the Turkey
30 minutes before cooking remove the turkey from the refrigerator and bring to room temperature. The oil in the fryer should be 350° degrees for optimal cooking and the turkey must be dry when going into the oil.

Most turkey fryer recipes call for peanut oil, add this up to the line inside of the turkey fryer. Slowly place the turkey breast side down into the fryer basket. Allow the oil temperature to lower to 300°F and continue frying, it is recommended that you fry for 4 minutes per pound of turkey.

Remove the turkey to a serving platter and season to taste with salt and pepper. Place the bird upside down fro at least 20 minutes so the juices will redistribute to the breast. Flip the turkey right side up and serve with garnishes of choice.

CAJUN FRIED WHOLE TURKEYS
2 whole turkeys
16 oz. bottle Italian dressing
1 tbsp. garlic powder or garlic salt
1 tbsp. onion powder or onion salt
1 tsp. celery salt
1/3 bottle paprika pepper
1/2 can of beer (optional)
3 tsps. poultry season
1 tsp. salt (omit this if using garlic or onion salt)
1 tsp. pepper (black)
1 tsp. pepper (white)
2 tsp. cayenne pepper
4 dashes Tabasco

Wrap legs with foil and-or wire. Mix all ingredients and inject into each bird at least 12 hours before cooking and place in the refrigerator. Deep-fry the turkey using peanut oil, 4 minutes per pound. The oil in the fryer should be at 340 degrees.

DEEP FRIED HONEY TURKEY
12-14 lb. turkey
5 gallons peanut oil
SEASONING:
1 bottle Italian dressing
1/8 c. Lea & Perrins
Onion salt
Lemon salt
Garlic salt
Lemon juice
4 tbsp. honey
2 tbsp. brown sugar

Heat seasonings on stove until melted down then pour though a strainer. Insert into turkey with an injector. Be sure to season the outside of the turkey as well, butter, salt and pepper works nicely, then refrigerate overnight.
Fry turkey in wire basket at 300 to 310 degrees for 45 to 55 minutes. 4 minutes per pound.

Turkey fryer recipes are pretty consistent, all go into the fryer but it's the seasonings that make them unique. Get creative and see what flavor combinations you can come up with to have a delicious fried turkey.

History of the Dishwasher

The first recorded evidence of a dishwasher was from 1850 when a simple hand turned splashing device attached to a wooden tub made by Joel Houghton was given a patent. Developing on this idea L.A. Alexander added gears to a spinning rack holding dishes that allowed it to be spun inside a tub of water and this was patented in 1865. Both of these were very crude and made entirely of wood and did not actually clean dishes very well.

Josephine Cochrane was a wealthy woman and had engineering in her blood as her grandfather John Fitch was famous for inventing the steamboat. She also liked to entertain friends frequently and hold social events at her home resulting in a lot of dishes needing to be cleaned each time. The crockery she used for entertaining was expensive and was often getting broken by the servants while washing up. Getting fed up with this she decided to build a dishwasher that could wash dishes quickly without breaking them. She built a machine consisting of a wooden wheel lying flat in a copper boiler which could be turned either by hand or driven by a power source via a pulley. Wire framed compartments made to fit her dishes were attached to this wheel and the combination of it spinning and soapy hot water being showered on them by the boiler resulted in the first efficient dishwasher.

She took her dishwasher to the world fair in 1893 in Chicago where it won the highest award and people ranging from friends to hotel and restaurant owners were queuing up asking for a dishwasher machine of their own. Quickly she patented the invention and opened a production factory to build them and this company became the household appliance giant today known as KitchenAid. More companies also started making other versions some with conveyor belts and others with baskets spun by various methods both using a jet or spray of hot water poured from above to clean the dishes.

It wasn't till the 1920's that any significant advances were made to the design of these machines when permanent plumbing was introduced to hook them up to a constant water supply. Only restaurants, hotels and wealthy families had these appliances as they were large and expensive and it wasn't till 1937 that a dishwasher small enough for a home was built. It was built by William Howard Livens and looked more like the washers we have today with mesh baskets inside a metal container and a front opening door with a drying element introduced into its design in 1940. Gradually they became smaller, cheaper and more efficient and by the end of the 50s were getting more popular as a home kitchen appliance. Popularity continued to increase with most homes in the USA owning one by the end of the 70s. Today they are popular all through Europe and the Middle East where they took longer to catch on than in the USA.

Jamaica is an island nation located in the Caribbean Sea, to the south of Cuba and west of the island of Hispaniola (which contains Haiti and the Dominican Republic). Jamaican cuisine is perhaps known for its use of spices. In particular, pimento (also known as "pimenta", "allspice" or "Jamaica pepper"), and annatto (a spice that tastes like pepper with a hint of nutmeg and comes from pulp surrounding the fruit of achiote trees), play an important part in many dishes.

Another unusual ingredient in Jamaican cuisine is ackee (also sometimes spelled "akee" or "achee") which is a kind of fruit, which is boiled and then sautéed with salted fish (cod), tomatoes, onions and peppers. Great care must be taken to prepare ackee properly, because if this is not done correctly there is actually a risk of poisoning!

There are a great variety of other interesting Jamaican recipes, some of which you may have heard of, including:

- Jerk dishes for example are meats prepared in by rubbing with a spicy marinade and then cooked over a grill or in an oven (traditionally they were smoked by nowadays this is less common that it once was).

- Curried goat is goat meat cooked in a spicy sauce.

- Rice and peas consists of rice cooked with coconut milk, herbs and flavorings and mixed with legumes such as kidney beans.

The sign in the window flashed - "Buy 3 and get one free."  Your personal "mind leadership" is telling you to just look, and that you must be accountable to your budget plan. You are sucked into a store where you never shop because you are intrigued about what you can save.  Here's an idea; you didn't even think of buying it so why even open the door?  A team of researches tried to find out what really goes on when faced with the decision to buy from a business. Backed by taking personal responsibility for your choices, here are some considerations.

Don't do it!

1.    Leave the kids at home because you will buy 40% more.  You have trained your kids the techniques to trick you into buying more stuff.  "I'll feed the dog for the month if you buy me this toy" or the terrible public behavior like having a tantrum in the middle of the store.

2.    Shop with a list. If it's not on the list don't buy it.  This is especially useful for Holiday shopping. Give yourself a budget for each person. Consider taking the amount of cash you need for the gifts on your list.  Curb the temptation of spending $10 or $20 more just because you saw something they might like!

3.    Don't get a cart and if you do, choose a small one or a small basket with handles.  People buy roughly 30% more with a big cart.  Feeling self-conscious spurs this behavior.  Having two oranges and a quart of milk in some oversized cart makes many people subconsciously uncomfortable.  Dopamine, an addictive substance in your body, increases in anticipation of any kind of reward and that includes shopping. These heightened levels of this self made drug in your brain increase when a big cart is filled with stuff you don't need.

4.    Eat before you shop. Sniffing good smells increases your tendency to buy.  Why do you think the entrance to stores is surrounded with the smell of cinnamon roles, fresh baked goods and rotisserie chicken? Your nose has a direct link to the sense of well being through emotions and memories.  This gives you a powerful surge of comfort and domesticity and the "gut response" has kicked in. Bulk up before you leave the house and buy!

5.    Take a debit card only and leave your credit cards at home.  The "unlimited funds" thinking behind credit and credit cards is very dangerous.  Unless you have a money tree in your back yard, you do not have unlimited funds at your disposal.

In the USA, there are approximately 17 million shopaholics and people addicted to the pleasure of buying junk they don't need. Why give yourself the stress of having to dig yourself out of debt?  Don't become a Toxic Person because of your uncontrollable spending! Take personal responsibility for what you buy!

How to BBQ a Whole Chicken on a Rotisserie

Rotisserie chicken from the grocery store has become a tasty last minute meal. It's tasty, but when you learn to how to bbq a whole chicken on your own rotisserie you'll realize how much better it tastes with not much more work than the trip to the store. You'll need a grill with a rotisserie, a whole chicken, butter or olive oil with seasonings, and about 1-1/2 hours of cook time for a yummy home-cooked chicken.

The first step is setting up your rotisserie on your grill. There are rotisseries made for both gas and charcoal grills. Follow your manufacturer's instructions and make sure that it rotates freely and is set to go. Place a drip pan with about 1/2 inch of water on the grill to catch excess fat and prevent flare ups and to add moisture to the roasting chicken. Fire up the grill to high and let it heat up while you prepare the chicken.

Rinse the chicken inside and out with cold water. Remove the giblets and excess fat, I cook those up separately for my kitties as a special treat. Pat the chicken dry inside and out with a paper towel. You can rub butter and salt inside the cavity or add some garlic or onion if you like for extra flavor. You're going to need to truss the chicken if your rotisserie is a spit without a basket. To truss the chicken you need to tie the legs and wings to each other so they don't flop around during cooking possibly getting burned or throwing the spit off center. The easiest way to do this is with heat-proof butchers twine or non-coated wire.

Once the bird is trussed it's ready to be spitted on the rotisserie. Slide the spit through the body of the chicken and make sure the pronged pieces at either end of the spit are secured into the chicken. These are to allow the chicken to turn with the spit so the chicken cooks evenly on all sides. Place the spit on the grill according to the manufacturer's directions and you're ready to go.

Turn off the burner or move the charcoal directly beneath the chicken so the heat is less direct. Baste the chicken every 20 minutes to 1/2 hour with butter or olive oil mixed with whatever seasonings you like. You want to let the chicken cook on it's own for the most part. Leave it alone and don't lift the lid of the grill more than you need to letting the heat out. If you like to use a glaze as a finishing touch, apply it during the last 10 to 20 minutes of cooking.

The whole preparation sounds more complicated than it is. Once you learn how to bbq a whole chicken, the set up time is a snap. The cooking time will depend on the size of the chicken and the heat of the grill. Once the chicken is on the rotisserie and cooking, it requires minimal attention and allows the cook to tend to the rest of the meal, the guests, or just put your feet up for a bit and enjoy the cooking smells.

Webmasters Use Widgets To Turn Dead Space Into Web Traffic

Widgets are giving webmasters a simple way to generate revenue from the dead space on their web pages. By adding a small piece of code on each page the webmaster not only brings relevant targeted ads to site visitors but also generate revenue or additional traffic depending on the network providing the widget. The technology is simple and the options are growing every day.

Power in Simplicity
One of the reasons widgets have become so popular is because of their simplicity. Ron Popeil, one of the greatest television pitch men of all time, sold millions of chicken rotisserie machines on late night TV with five simple words, Set-It-And-Forget-It! Widgets work on the exact same principle. The webmaster puts a little snippet of code on the web page and the ads, games, pictures, or music is piped to the computer screen. It literally opens a little window into the web page that someone from the outside can control. The webmaster drops in the widget and the content is rotated in.

How much is that Doggy in the Window?
Have you ever wondered how the bundle of ads on the right side of your screen is always of at least general interest to you? When you are using Google it puts ads there that are related to your most recent search. That makes sense because the mad scientists at Google control which ads are sent and know the search words you just used. Because Google knows who is looking into that little window on the web page they know exactly what kind of puppy to put behind it to get you to buy. It is the ultimate in targeted marketing.

Monetizing the Window

Google is willing to pay the webmaster a penny or two every time an ad in the window is clicked. It is called monetizing your web traffic. That is the good news. The bad news is that unless you have about a gazillion visitors to your website you are never going to make much money. Not only that, but if the webmaster wants to use Google Ads to drive traffic to his or her website the cost for each visitor can be very high.

Real World Examples
If a person has a website that sells e-books they can sign up with Google to place small ads for them on relevant websites. When someone clicks on one of those ad they are directed to the e-book website and a click fee is deducted from the webmasters account. At the time of this writing the keyword e-book marketing had a cost-per-click from Google of $3.06. If the keyword used was debt consolidation the cost would be $20.59 per click. Even something as obscure as wicker baskets carries a cost-per-click of $1.55. In these cases the odds seem to be stacked against the independent website owner in both directions. The space on their website is not worth much and driving traffic there is expensive.

Traffic is King
For the webmaster there is nothing more valuable than traffic. Whether you are selling chicken cooking machines or trying to get your poetry noticed you need traffic to be successful. Technology has made putting together a website pretty simple. However, driving consistent traffic to a website is much more complicated. Pay-per-click companies like Google, Yahoo, and others use an auction system for keywords because companies with deep pockets are willing to pay top dollar for traffic. Again, this system does not favor the small webmaster trying to promote his or her website.

The Entrepreneurs Step In
The key to successful entrepreneurship is identifying and filling needs, often with very simple solutions. The answer to the small webmasters dilemma was not only simple but had been around since medieval times. Cut the robber baron out of the middle and form a cooperative system where participants can support each other in realizing their goal, in this case, driving traffic to their websites. Several new firms are now doing just that by setting up cooperative type systems that serve the small webmaster and blog owner.

Building a Widget
Although there are some subtle differences between the firms that offer this type of system most include the following steps.

* Join the network (generally both free and pay options are available)
* Identify the ad categories they think would be most successful on their site
* Choose a style and size of widget or ad block that best fits their site
* Create text ads that will go in widgets on other sites
* Put the simple code generated by the system on their web pages

How the Systems Work Just like Google AdWords these systems send targeted ads into the widgets but there is no pay-per-click system. Instead, every time a widget is viewed on the webmasters site a credit is earned to have one of the webmaster's ads shown on another site in the network. This is a self-perpetuating system because views generate credits which generate traffic which generates more views, more credits, and on and on. In addition, most systems have links on their widgets so webmasters receive recognition for referring other members to the network which is rewarded with even more advertising credits. Through what is called The Multiplier Effect, the focus on traffic will ultimately be of much greater value to the small webmaster than selling the space on their web pages.
